During a lunch in Montpellier, my friend Caroline who is a vegetarian ordered the veggie version of the brunch, among the dishes was this cream cheese and tomatoes tartar, which looked so tasty. Once back home, I wanted to try it with fresh and dry tomatoes, a pinch of basil and cheep cream cheese for the original taste. The result is fresh and delicious, very simple to make, so let’s go ! This tartar is perfect for a summer lunch, enjoy !
- Equipment :
– 2 pastry circles
- Ingredients (serves 2) :
– 2 tomatoes
– 5 dry tomatoes with oil
– some basil leaves
– salt and pepper
– 2 teaspoons pesto sauce
– 1 cheep or goat cream cheese
– 1 tablespoon olive oil
Put the pastry circles on two plates.
Cut small the dry and fresh tomatoes.
Mix together the tomatoes, add some salt and pepper.
Cut the basil leaves and add it to the tomatoes. Put the tomatoes in the pastry circles, push with a spoon to the bottom of the circles.
Add a teaspoon of pesto sauce on the tomatoes, spread it.
Crush the cream cheese, and split it in two halves, spread each inside the circles.
With a tissue, remove the juice on the plate.
Add a little bit of olive oil on top and put some basil leaves.
Slowly remove the circles, and serve quickly.
