Chorizo-mozzarella rolls

This recipe is one of my favorite for lunch or a picnic. It’s really tasty and so easy to make, you can also freeze the rolls before cooking. Summer or winter, this mozza-chorizo rolls are the best!

Serve for 14 rolls

  • Ingredients :

For the dough :

– 600g flour with yeast

– 2 eggs

– 20cl milk

– 75g melted butter

– 1 pinch of salt

– fresh chopped off basil

For the filling :

– 1 mozzarella

– 150g of tomato concentrated sauce

– 150g chorizo

– fresh chopped off basil

  • Directions :

Make the brioche dough :

In a big bowl, mix together the flour, eggs, milk and melted butter. Add the basil and the salt, knead until the dough is smooth.

Cover with a clean and wet towel for about an hour so it can raise.

Make the filling :

Mix together the tomato concentrated sauce with fresh basil, keep for later. Cut the mozzarella in cubes and keep also.

Make the rolls :

When the dough is ready, divide it in two bowls and spread into two rectangles of 40cm length and 20cm heigh. Spread the tomato concentrated sauce/basil all over the dough, put the slices of chorizo and the mozzarella.

Roll the rectangle on the larger side to make a long roll. Close it tight in sticking the last side of the dough to the roll.

Cut delicately with a big knife in about 7 rolls.

In a rectangular baking dish previously oiled, put the rolls without too much space between them, while baking they will rise and stick to each other, which keep the sides soft.

Cover the baking dish with the towel and let the rolls rise for 15 minutes more.

Bake for 15 minutes at 180°C in the oven.
